Series How To Grow Cook Shoot Tomatoes


On this post you can learn how to grow your own tomatoes, there is no flavor like this, and it is not only the rewarding feeling, indeed the flavor as no pair. I will also share two delicious recipes and some different cooking ideas, so you can enjoy tomatoes flavors all year long. If you are like me, and sharing your food and your photography journey it is important to you, I will share how to shoot these nature gems, so red and juicy, stay with me and see what I learned
in this path.


Episode #1 How to Grow Tomatoes

I started planting tomatoes about six years ago, I learned from my grandfather, later from my neighbors and also from researching books on organic farming.

Here I share my experience of essential plant care:

1. Lots of sun (heat) and water, keep the roots moist, especially on the hottest days, cover the roots with a layer of leaves helps (padding).

2. Fertilize at least three times while growing, using compost or macerating nettles (liquid fertilizer). 

3. Prune lateral brunches, which remove strength and nutrients from the main stem.

4. To prevent and control mildew, use a garlic broth and a 1:20 milk solution, means that strengthen the foliage.

The most important thing is to start, have the will to learn from our own plantations and the desire to taste what we care for, to eat organic and enjoy this path.


Episode #2 Storytelling in Food Photography



Let´s deconstruct this process photo together: What feeling do I want to convey?

These tomatoes were freshly picked, the atmosphere is rustic and welcoming, I feel calm, these simple moments make me happy. I used the wooden bowls and basket, the analogue purple, blue tones for a sense of calm, the deep red for my passion for home harvesting. This is a process photograph, follows on from the previous photo (the harvest), and transports us to the tomatoes to be cooked, thus contributing to tell our story.






Episode #3 Roasted Red Tomato Soup with Basil


So fresh, tastes like summer. Roasting enhances tomatoes sweetness and you can use them to make tomato sauce, add them to pasta or for this delicious and very nutritious soup.


Recipe: 

500 g red tomato cut into 1 cm slices

1 leek sliced

2 chopped garlic cloves

a drizzle of olive oil

a pinch of salt

a pinch of spicy red pepper

200 ml water

In an oven tray, place all ingredients arranged in a single layer, sprinkle with olive oil, salt and spicy. Bake for 40 min at 180°C. Save a few tomato slices to serve at the end and pass the remaining vegetables, add water to obtain a creamy soup. Rectify the seasoning and serve it cold, or hot with fresh basil leaves.












Episode #4 Tomato and Basil Galette



We continue this series with our hero the Home Grown Tomatoes, yes those full of flavor, which matured in the tomato plant, absorbed that good summer heat and now make our delights.


Recipe: 


2 ½ cups spelt flour

½ tsb salt

⅔ cup cold butter

½ cup ice water

Add the flour and salt, the butter and mix between your hands (or in the food processor) until it forms a sandy dough, add the cold water, enough to unite the dough. Refrigerate for 15 min. Divide the dough into 5 parts, shape a circle, and arrange the tomato wedges on the counter, sprinkle with salt, oil and basil. Bake in a preheated oven at 180°C for 20 min.



Episode #5 How to Shoot a Flatlay



Five episodes in total, sharing my day to day, everything I'm learning, enjoying, what I am. The result of this Tomato and Basil Galette, these rustic flavors, so honest, natural in each one of us.

For last, I want to share two important aspects to shoot a good flatlay (shooting from above).

1. What lens are you going to use? In this flatlay I want to include a more wide view of these galettes, so I use a lens with a shorter focal length, 35-50mm, which implies that everything is further away and we have more space available in the frame.
2. Watch out for the distortion effect. Lenses with a shorter focal length can make our scene look distorted, especially when we're shooting up close, giving the feeling that the elements at the edges are falling out. Therefore, it is important to keep the lens away from the general scene and sometimes use small objects to place under the props and tilt them.




Another example of a flatlay, this summer salad, all vegetables picked from our backyard, courgette, tomato, arugula, basil, chives and blackberries. The pleasure of harvesting, the unique taste of tomatoes, the ritual of planting and harvesting, savoring in all its splendor. Seasoned with salt and a simple vinaigrette, it don't need more, flavors complement each other!

Serie Como Plantar Cozinhar e Fotografar Tomates

Neste blog post vou partilhar as minhas aprendizagens em como crescer os vossos próprios tomates, na verdade não há prazer como este, e não é apenas a sensação de satisfação de cultivarem a vossa própria comida, de facto não há sabor igual.


Episódio #1 Como Plantar Tomates

Iniciei a plantação de tomates á cerca de seis anos, aprendi com o meu avó, mais tarde com os meus vizinhos e também com a pesquisa em livros de agricultura biológica.


Partilho aqui a minha experiência dos cuidados essenciais na plantação:

1. Muito sol (calor) e água, manter as raízes húmidas, principalmente nos dias mais quentes, cobrir as raízes com uma camada de folhas ajuda (acolchoamento).

2. Adobar pelo menos três vezes durante o crescimento, uso composto ou macerado de urtiga (fertilizante liquido).

3. Podar os rancos laterias, que retiram força e nutrientes á haste principal.

4. Prevenir e tratar míldio, com calda de alho ou solução de leite1:20, fortalecendo a folhagem.

O mais importante é começar, ter a vontade de aprender com as nossas próprias plantações e o desejo de saborear aquilo que cuidamos, de comer biológico e aproveitar este caminho.


Episódio #2 Contar uma historia através da fotografia de comida

Vamos desconstruir esta foto de preparação dos tomates juntos: Qual o sentimento que quero transmitir?

Estes tomates foram acabados de colher, o ambiente é rústico e acolhedor, sinto-me calma, estes momentos simples fazem-me feliz. Usei as taças de madeira e o cesto, os tons roxo, azul análogos para uma sensação de calma, o vermelho forte para esta minha paixão pela colheita caseira. Esta é uma fotografia de processo, vem na continuidade da foto anterior (a colheita), e transporta para os tomates a serem cozinhados, contribuindo assim para contar a nossa historia.


Episodio #3 Sopa de Tomate Chucha Assado com Manjericão


Fresca, com sabor a Verão e muito fácil de fazer. Assar assim os tomates, realça a doçura, e podem depois utilizar em molhos, numa massa ou para fazer esta sopa cheia de sabor.

Episódio #4 Galette de Tomate e Manjericão



Continuamos com o herói desta serie, os Tomates caseiros, sim aqueles cheios de sabor, que amadureceram na tomateiro, absorveram aquele calor bom de Verão e agora fazem as nossas delicias.


Receita: 2 ½ chav farinha espelta, ½ c chá sal, ⅔ chav manteiga fria, ½ chav agua gelada. Adicionar á farinha e sal, a manteiga e desfazer entre as mãos até formar uma massa areada, adicionar a água fria aos poucos, o suficiente para unir a massa. Refrigerar por 15 min. Dividir a massa em 5 partes, moldar um circulo, e dispor os gomos de tomate no centro, polvilhar com sal, azeite e manjericão. Cozer em forno preaquecido a 180°C por 20min.


Episódio #5 Como fotografar uma cena vista de cima


São cinco episódios no total, partilhas do meu dia a dia, de tudo aquilo que vou aprendendo, aproveitando, daquilo que também eu sou. O resultado desta galette de tomate e manjericão, destes sabores rústicos, tão verdadeiros, naturais em cada um de nós. Termino com dpis aspetos importantes a ter em consideração ao fotografar em flatlay (vista de cima).

1. Qual a lente que vão usar? Nesta flatlay quero incluir uma visão mais geral destas galettes, por isso uso uma lente com um comprimento focal mais curto, 35-50mm, o que dá a entender que tudo está mais longe e temos mais espaço disponível.

2. Cuidado com o efeito de distorção. As lentes com menor comprimento focal podem fazer a nossa cena parecer distorcida, principalmente quando estamos a fotografar de muito perto, dando a sensação que os elementos nas extremidades estão a cair. Portanto, é importante manter a lente afastada da cena geral e por vezes usar pequenos objetos para colocar por baixo das props e incliná-las.

VEGAN STRAWBERRY VANILLA PIE



Vegan Strawberry and Vanilla Pie, fresh, creamy, a Spring celebration! Inspired by seasonal products, and by the beautiful strawberries we picked in the garden. I would love some tips I learned from my own experience and research. It requires some care, such as a well-nourished soil with no weeds, frequent cleaning of older and dry leaves, daily watering on the hottest summer days and keeping the neighborhood free from snails. Good padding keeps the fruit dry and away from the soil, as direct contact tends to rot the still green strawberries. Strawberry plants cast long stems, stalks or guides, which form small roots and in contact with the earth give rise to a new plant. It is important to change strawberries every 2-4 years so they remain productive, transplantation is an effective method of expanding and renewing strawberry culture. As it is a small plant with shallow roots, it is possible to keep it in pots or flower boxes on the balcony. Hope you enjoy this seasonal and delicious pie, the base is very simple, healthy and crunchy, the filling is so creamy and flavourful, you can add any fresh fruit you like on the top.

VEGAN STRAWBERRY VANILLA PIE

(Healthy Dessert / Creamy / In season)


Crust:

150 g plain flour

50 g wholegrain flour

2 Tbsp virgin olive oil

80ml hot water

½ tbs salt

2 tbs honey


Vanilla Custard Filling:

2 cups vegetable milk

2 Tbsp corn flour

2 Tbsp coconut sugar

1 tsp vanilla powder

Method:

1. For the crust just mix everything very well, wait 20 min for the dough to cool, shape it thin, to be easy to cut. Bake in oven previously heated to 180°C for 12 minutes. 

2. For the vanilla custard filling: heat the vegetable milk with vanilla, when it boils, remove from heat, let it flavor for 20 min. In a saucepan, dissolve the flour in this milk, add sugar, let it thicken, stirring constantly, until you get a creamy consistency. 

3. Pour vanilla custard into the pie base and bake for another 20 minutes. 

4. Decorate with fresh strawberries.

Good sweet and healthy moments!



TARTE DE MORANGOS E BAUNILHA

(Sobremesa Saudável / Vegana / Cremosa / Sazonal)


Base:

150 g farinha branca

50 g farinha integral

2c sopa azeite

80ml água quente

½ c chá sal

2c chá mel 


Recheio:

2 chávs leite vegetal 

2 c sopa de farinha

2 c sopa açúcar de coco

1 vagem de baunilha ou 1 c café baunilha em pó


Preparação:

1. Para perparar a base é só misturar tudo muito bem, aguardar 20 min para massa esfriar, moldar fininha, para ser fácil de cortar. Cozer a base por 12 minutos, a 180°C em forno preaquecido, 

2. Para preparar o creme de baunilha: Aquecer o leite vegetal com a vagem ou pó de baunilha e quando ferver, retirar do lume, deixar aromatizar por 20 min. Num tacho, dissolver a farinha neste leite e adicionar o açúcar de coco, deixar engrossar, mexendo sempre, até obter uma consistência cremosa. 

3. Verter o creme na base de tarte e levar ao forno por mais 20 min. 

4. Cortar osmorangos e colocar no topo.

Aproveitem bem, é muito fácil de preparar e sabe tão bem!!




SWEET POTATO AND TANGERINE CAKE



Being seasonal produces, tangernie and sweet potato combine perfectly yogether. This cake ,with wholemeal flour, is so moist and delicious, when using sweet potatoes we add moisture without adding fat or too much sugar. 

SWEET POTATO AND TANGERINE CAKE

300 g cooked and mashed sweet potatoes 

125 g wholemeal flour

1 teaspoon baking powder 

4 eggs 

125 yellow sugar

 juice and zest of two tangerines


Method:

1. Beat egg yolks, sugar and tangerine zest until light and fluffy.

2. Add the tangerine juice, sweet potato, flour and baking powder. Beat and enwrap egg whites. 

3. Preheated the oven at 180°C for 20 minutes, until golden.


Serve with fresh tangerine and enjoy. 



BOLO HÚMIDO DE BATATA DOCE E TANGERINA

300 g batata doce cozida e esmagada

125 g farinha integral 

1 colher de chá de fermento 

4 ovos 

125 açúcar amarelo 

sumo e raspa de duas tangerinas


Preparação:

1. Bater as gemas, o açúcar e a raspa de tangerina até obter creme leve e fofo, 

2. Adicionar a batata doce, farinha e fermento. 

3. Bater as claras em castelo e envolver delicadamente. 

4. Cozinhar em forno pre aquecido a 180°C por 20 minutos, até douradinho.


Servir com gomos de tangerina, bom proveito.
