LAVENDER AND RYE COOKIES

BOLACHAS DE CENTEIO E ALFAZEMA
(Integrais / Cheias de fibra / Amantes da alfazema) 




Há por aí amantes de alfazema? Então estas bolachas de centeio e alfazema são para vocês e todos aqueles que gostam de experimentar novos sabores e ser surpreendidos, que na verdade foi o meu caso. Nunca fui grande fã do sabor da alfazema, normalmente uma boa infusão desta erva aromática com limonete é o ideal para mim, contudo há já algum tempo que queria explorar mais estas flores roxas, de sabor fresco, com características medicinais únicas. O centeio integral integra na perfeição com o sabor da alfazema, são doces o suficiente para que a alfazema não se torna excessivamente amarga e repletas de fibra, crocantes e muito românticas. Ou talvez eu sinta mais romantismo ao saborear estas bolachas pela manhã com um café.

BOLACHAS DE CENTEIO E ALFAZEMA

150 g farinha centeio integral
50 g farinha de trigo
75 g açúcar
75 g manteiga fria aos cubos
1 ovo
2 colheres de sopa de flor de alfazema seca
uma pitada de sal

Preparação:

1. Colocar a farinha numa taça ou robô de cozinha, adicionar as flores de alfazema previamente esmagadas no pilão, o açúcar, sal e a manteiga, misturar com os dedos até obter uma massa areada. 
2. Misturar o ovo e envolver bem, de modo a obter uma massa macia, mas não pegajosa. Colocar no frigorifico por 15 minutos.
3. Estender a massa com a ajuda de um rolo até ficar com uma espessura de 5 mm. Com um corta-massa redondo e canelado, cortar os círculos e colocar num tabuleiro previamente untado.  Colocar no frigorifico por 15 minutos.
4. Cozer as bolachas em forno previamente aquecido a 180°C, por 8-10 minutos, até ficarem levemente douradas. Transferir para uma grelha para arrefecerem por completo. Guardar numa lata hermética até 5 dias.

LAVENDER AND RYE COOKIES
(Wholegrain / Full of fiber / Lavender lovers)

150 g wholemeal rye flour
50 g wheat flour
75 g sugar
75 g diced cold butter
1 egg
2 tablespoons of dry lavender flowers
a pinch of salt

Method:

1. Place the flour in a bowl or a food processor, add the lavender flowers previously crushed in the pestle, the sugar, salt and butter, mix with your fingers until you get a dough.
2. Mix the egg and mix well to obtain a soft, but not sticky, dough. Place in the refrigerator for 15 minutes.
3. Roll out the dough with the help of a roller until it is 5 mm thick. With a round and corrugated cutter, cut the circles and place on a previously greased tray. Place in the refrigerator for 15 minutes.
4. Bake the cookies in an oven previously heated to 180°C, for 8-10 minutes, until lightly browned. Transfer to a grill to cool completely. Store in an airtight can for up to 5 days.

PÃO DOCE DE CANELA E CENTEIO COM FERMENTO NATURAL

SWIRLED CINNAMON AND RYE SOURDOUGH BREAD
(Massa leve e fofa / Aquele cheirinho a canela / Vegano)


Existe uma magia simples, doce, acolhedora e nova neste Pão Enrolado de Canela e Centeio, um sabor bom, um cheirinho que enche a alma, uma textura que conforta. O centeio é um cereal que eu uso bastante, gosto do sabor, da textura mais densa, gosto de variar em relação ao típico trigo comum e adoro combinar com canela. Este pão foi fermentado natural e lentamente, ao longo do tempo tenho alterado a quantidade de fermento natural que uso e parece estar mais equilibrada agora, com sabores mais suaves, mas igualmente característicos e como trabalho a massa de forma diferente, torna-se um pão mais leve e fofo. Lindo, simples, aquele cheirinho a canela que enche a casa e alma, adoro quando assim é, experimentem vale mesmo a pena.

Pão Doce de Canela e Centeio com Fermento Natural

300 g farinha de centeio
200 g farinha de trigo
100 g fermento natural de centeio integral
100 ml de leite vegetal
2 colheres de sopa de óleo de coco
2 colheres de sopa de mel
1 colher de chá de sal
1 colher de chá de canela
Leite com mel para pincelar no final

RECHEIO: ½ chávena de puré de tâmaras, 2 colheres de sopa de canela, 1 colher de sopa de açúcar de coco.

Preparação:

1. Num robô de cozinha ou taça grande misturar todos os ingredientes, tapar com um pano e aguardar 30 minutos de modo a que a autólise ocorra. Depois da massa descansar, misturar todos os ingredientes pelo menos uns 7 a 9 minutos para desenvolver o glúten. Para amassar a massa á mão, serão necessários uns 12 a 15 minutos. Colocar a massa numa taça polvilhada com farinha, agarrar uma porção da massa, esticar e encolher em direção ao centro da taça, repetir isto 4 vezes, rodando a taça á medida que se avança.  Isto permite arejar a massa e obter uma massa mais leve e fofa. Deixar descansar em local com temperatura amena por 6 a 12 horas, até duplicar de tamanho.

2. Gentilmente retirar a bola da taça e colocar na bancada polvilhada com farinha. Esticar e recolher as bordas da massa para gentilmente retirar algum ar da massa. Virar a massa ao contrário de modo a formar uma bola lisa e deixar descansar 15 minutos na bancada para o glúten relaxar.

3. Untar uma forma retangular alta (tipo pão de forma) com óleo de coco e polvilhar com farinha. Polvilhar a massa e rolo da massa levemente com farinha e estender a massa em forma de retângulo de modo a obter 2 vezes o comprimento da forma. Misturar todos os ingredientes do recheio e espalhar de forma uniforme na massa. Enrolar pelo lado mais comprido lentamente e de forma a que no final a borda fique virada para baixo. Cortar este rolo em duas partes iguais e colocar na forma um sobre o outro, de modo a conseguir um duplo rolo.

4. Levedar uma segunda vez. Dependendo do vigor do fermento deverá demorar entre 1 e 3 horas. Para este tipo de massa, são necessárias 3 horas. Antes de cozer, gentilmente pincelar a massa com uma mistura de leite e mel para obter uma cor dourada.

5. Colocar no forno pré-aquecido a 200°C. Cozer 40 a 50 minutos até o pão crescer bem, apresentar uma cor dourada e soar a oco quando bater com a ponta dos dedos. Deixar arrefecer pelo menos 2 horas antes de o abrir.

Acompanhei com um chá de alfazema, um momento relaxante e muito saboroso.  



SWIRLED CINNAMON AND RYE SOURDOUGH BREAD
(Light and fluffy dough / That smell of cinnamon / Vegan)

300 g rye flour
200 g wheat flour
100 g natural whole rye sourdough
100 ml of vegetable milk
1 tablespoon of coconut oil
1 tablespoon of honey
1 teaspoon salt
1 teaspoon cinnamon
Milk with honey to brush at the end

FILLING: ½ cup of date puree, 2 tablespoons of cinnamon, 1 tablespoon of coconut sugar.

Method:

1. In a food processor or large bowl, mix all ingredients, cover with a cloth and wait 30 minutes for autolysis to occur. After the dough rests, mix all the ingredients for at least 7 to 9 minutes to develop gluten. To knead the dough by hand, it will take about 12 to 15 minutes. Place the dough in a bowl sprinkled with flour, grab a portion of the dough, stretch and shrink towards the center of the bowl, repeat this 4 times, rotating the bowl as you go. This aerate the dough and allow to obtain a lighter and fluffy dough. Let it sit in a warm place for 6 to 12 hours, until it doubles in size.

2. Gently remove the ball from the bowl and place it on the bench sprinkled with flour. Stretch and collect the edges of the dough to gently remove some air from the dough. Turn the dough upside down to form a smooth ball and let it sit for 15 minutes on the bench for the gluten to relax.

3. Grease a high rectangular shape (loaf of bread) with coconut oil and sprinkle with flour. Sprinkle the dough and roll the dough lightly with flour and roll out the dough in a rectangle shape to obtain 2 times the length of the shape. Mix all the filling ingredients and spread evenly over the dough. Roll up the long side slowly and in such a way that at the end the edge is facing downwards. Cut this roll in two equal parts and place it on top of each other to obtain a double roll.

4. Leaven a second time. Depending on the sourdough vigor, it should take between 1 and 3 hours. For this type of dough, it takes 3 hours. Before baking, gently brush the bread with a mixture of milk and honey to obtain a golden color.

5. Place in the oven preheated to 200°C. Bake 40 to 50 minutes until the bread grows well, has a golden color and sounds hollow when you tap with your fingertips. Allow to cool for at least 2 hours before opening.

Just wonderful with a lavender tea, a relaxing and very tasty moment.




APPLE AND RYE SOURDOUGH ROLLS

CARACÓIS DE CENTEIO E MAÇÃ COM FERMENTO NATURAL
(Massa Fofinha / Muito Saciável / Cheirinho Incrível)




Uma delícia, muito fofinhos, reconfortantes, adoçados com puré de tâmara e pedacinhos de maçã cozida lentamente, os sabores combinam com o centeio na perfeição. A massa levedou lentamente, no seu tempo, e eu respeito estas massas cheias de sabor, benefícios nutricionais e personalidade. Estes Caracóis de Centeio e Maçã ficam deliciosos com uma cobertura de iogurte natural e geleia de agave, os sabores cruzam-se, as texturas complementam-se, experimentem, vão adorar!

CARACÓIS DE CENTEIO E MAÇÃ COM FERMENTO NATURAL 

300 g farinha de centeio integral
200 g farinha de trigo
150 g fermento natural de centeio integral
2 colheres de sopa de manteiga sem sal derretida
2 ovos
150 ml de leite
½ colher de sal
50 g de açúcar

Recheio: ½ chávena de puré de tâmaras.
   400 g de maça descascada, cozida lentamente com um pau de canela.

Para terminar: 1 iogurte natural + 1 colher de sopa de geleia de agave.

Preparação:

1. Num robô de cozinha misturar todos os ingredientes da massa pelo menos uns 7 a 9 minutos para desenvolver o glúten. Para amassar a massa á mão, serão necessários uns 12 a 15 minutos. Deixar descansar em local com temperatura amena por 3 horas.
2. Transferir a massa para uma superfície de trabalho enfarinhada e estender num retângulo de aproximadamente 38 cm X 30 cm. Barrar o puré de tâmaras e a maçã cozida em cima da massa até cerca de 2 cm das bordas. Enrolar começando por um dos lados mais compridos do retângulo. Cortar a massa em 12 fatias e dispor num tabuleiro untado com os lados cortados para cima.
3. Levedar uma segunda vez. Dependendo do vigor do fermento deverá demorar entre 1 e 3 horas. Como esta massa contém ovos e manteiga, convém levedar por 3 horas.
4. Colocar o tabuleiro no forno pré-aquecido a 220°C durante 20 a 25 minutos até ficarem dourados e os caracóis suarem a oco quando lhes bater.
5. Servir quentes ou frios, com a cobertura de iogurte.

APPLE AND RYE SOURDOUGH ROLLS
(Fluffy Dough/ Very Satiable / Incredible Smell)

300 g whole rye flour
200 g wheat flour
150 g natural whole rye sourdough
2 tablespoons melted unsalted butter
2 eggs
150 ml of milk
½ spoon of salt
50 g of sugar

Filling: ½ cup of date puree.
            400 g of peeled apple cooked slowly with a cinnamon stick.

To finish: 1 plain yogurt + 1 tablespoon of agave syrup.

Method:

1. In a food processor, mix all the dough ingredients for at least 7 to 9 minutes to develop gluten. To knead the dough by hand, it will take about 12 to 15 minutes. Let it sit in a warm place for 3 hours.
2. Transfer the dough to a floured work surface and roll out a rectangle approximately 38 cm X 30 cm. Spread the date puree and the cooked apple on top of the dough until about 2 cm from the edges. Roll starting from one of the longest sides of the rectangle. Cut the dough into 12 slices and arrange on a greased tray with the sides cut up.
3. Let it rise a second time. Depending on the vigor of the sourdough, it should take between 1 and 3 hours. Since this dough contains eggs and butter, it is best to rise for 3 hours.
4. Place the pan in the preheated oven at 220°C for 20 to 25 minutes until golden brown and the snails hollow up when hitting them.
5. Serve hot or cold, covered with yogurt.

GRATINADO DE BATATA DOCE COM CROSTA DE CENTEIO

SWEET POTATO GRATINATE WITH RYE CRUST
(Cremoso / Crosta Deliciosa e muito Crocante)

A batata doce chegou para ficar. Desde que iniciamos a plantação e obtivemos resultados que nos espantaram por completo, todos os anos em Junho arregaçamos as mangas e com todo o cuidado plantamos a batata doce. Estamos em Maio e ainda continuamos a consumir a nossa batata doce, e desta vez experimentei uma receita diferente. Gratinado de Batata Doce com Crosta de Centeio, o resultado são sabores novos, uma textura cremosa que contrasta com a crosta de centeio, salsa e queijo, acompanhado de umas favas frescas, acabadas de colher. Como molho, utilizei leite e iogurte natural magro, confere uma acidez boa, que contrasta com o doce da batata, contudo, se preferirem uma textura ainda mais cremosa e coesa, recomendo vivamente substituir o iogurte por natas. Daquelas refeições muito práticas e com todos os BENEFÍCIOS NUTRICIONAIS DA BATATA DOCE, colocamos no forno e não temos de nos preocupar mais, o cheirinho vindo do forno avisa-nos quando estiver pronto. GRATINADO DE BATATA DOCE COM CROSTA DE CENTEIO
6 pessoas

1 kg de batata doce
Noz moscada, ralada na hora
25 g manteiga, em cubos
200 ml leite
200 ml de iogurte natural magro
(contudo recomendo natas)
Sal e pimenta preta

PARA A CROSTA DE CENTEIO
50 g pão de centeio
25 g pão de trigo
2 colheres de sopa de sementes de sésamo
25 g de queijo da ilha ralado na hora
2 colheres de sopa de salsa picada

Preparação:

1. Untar um tabuleiro de forno com um pouco de azeite. Descascar a batata doce e cortar em rodelas bem finas. Dispor em camadas sobrepostas, temperando cada camada com noz-moscada, sal e pimenta e pequenas nozes de manteiga.
2. Misturar o leite e o iogurte e deitar por cima da batata doce. Levar ao forno pré aquecido a 200°C, durante 1 hora e 30 minutos, ou até as batatas estarem cozidas.
3. Para a Crosta de Centeio, torrar os pães, deixar arrefecer e picar no processador, misturar as sementes de sésamo, o queijo da ilha e a salsa picada.
4. Quando as batatas estiverem cozidas, espalhar a mistura de pão ralado por cima da batata doce para formar uma crosta. Levar novamente ao forno durante 20 minutos até se formar uma crosta dourada e estaladiça.

SWEET POTATO GRATINATE WITH RYE CRUST
(Creamy / Delicious and very Crunchy Crust)
Serves 6

1 kg sweet potato
Nutmeg, freshly grated
25 g butter, diced
200 ml milk
200 ml of low-fat natural yogurt
(however, I recommend heavy cream)
Salt and black pepper

FOR THE RYE CRUST
50 g rye bread
25 g wheat bread
2 tablespoons of sesame seeds
25 g of freshly grated Portuguese island cheese
2 tablespoons chopped parsley

Method:

1. Grease an oven tray with a little olive oil. Peel the sweet potato and cut into very thin slices. Arrange in overlapping layers, seasoning each layer with nutmeg, salt and pepper and small butter nuts.
2. Mix the milk and yogurt and pour over the sweet potato. Place in a preheated oven at 200 ° C for 1 hour and 30 minutes, or until the potatoes are cooked.
3. For the Rye Crust, toast the bread, let it cool and chop the 123 in the processor, mix the sesame seeds, the Portuguese island cheese, and the chopped parsley.
4. When the potatoes are cooked, spread the breadcrumb mixture over the sweet potato to form a crust. Bake again for 20 minutes until a golden, crispy crust forms.

ARGOLAS DE LIMÃO E CENTEIO_COM FERMENTO NATURAL

LEMON AND RYE SOURDOUGH RINGS
(Pão Doce / Sem Gordura / Massa Fofinha)


Estas Argolas de Limão e Centeio fazem as delícias da nossa mesa de lanche, com calma, a saborear cada bocadinho, uma tentativa de parar, estar no momento, agradecida por esta partilha. A massa é muito fofinha apesar da ausência de gordura, o centeio confere uma densidade que aqui combina tão bem com o sabor do limão. Preparem a vossa mesa, com amor, presença, saboreiem os pequenos momentos, em paz.

ARGOLAS DE LIMÃO E CENTEIO _COM FERMENTO NATURAL

325 g farinha de trigo
100 g fermento natural de centeio integral
75 g farinha de centeio integral
50 g de açúcar
50 ml de leite
1 ovo
¼ colher de chá de sal
½ colher de chá de canela
Raspa de 1 limão grande
Para terminar: 1 gema + 1 colher de sopa de água para pincelar; açúcar em pó
                     
Preparação:

1. Num robô de cozinha misturar todos os ingredientes pelo menos uns 7 a 9 minutos para desenvolver o glúten. Para amassar a massa á mão, serão necessários uns 12 a 15 minutos. Deixar descansar em local com temperatura amena por 12 horas.
2. Sovar a massa e formar uma bola, dividir a massa em 8 partes. Moldar cada parte numa bola, depois com o dedo fazer um furo na massa. Dispor as argolas espaçadas entre si 4 cm, num tabuleiro untado. Cobrir com um pano.  
3. Levedar uma segunda vez. Dependendo do vigor do fermento deverá demorar entre 1 e 3 horas. Para este tipo de massa, são necessárias 3 horas.
4. Colocar no forno pré-aquecido a 220°C. Cozer 15 minutos, até crescerem e ficarem douradas. Deixar estas Argolas de Limão arrefecer em cima de uma rede. Servir polvilhadas com açúcar em pó.

Deliciem-se com estes pãezinhos fofinhos e cheirinho a limão fantástico.


LEMON AND RYE SOURDOUGH RINGS
(Sweet Bread / Fat Free / Fluffy Dough)

325 g wheat flour
100 g natural whole rye yeast
75 g whole rye flour
50 g of sugar
50 ml of milk
1 egg
¼ teaspoon of salt
½ teaspoon of cinnamon
Zest of 1 large lemon
To finish: 1 egg yolk + 1 tablespoon of water to brush; powder sugar

Method:

1. In a food processor mix all ingredients for at least 7 to 9 minutes to allow gluten to develop. To knead the dough by hand, it will take about 12 to 15 minutes. Allow the dough to rest in a warm place for 12 hours.
2. Knead the dough and form a ball, divide the dough into 8 parts. Shape each part into a ball, then with your finger make a hole in the dough. Arrange the rings spaced 4 cm apart, on a greased tray. Cover with a cloth.
3. Leaven a second time. Depending on the vigor of the yeast, it should take between 1 to 3 hours. For this type of dough, it takes 3 hours.
4. To form the crosses: mix 4 tablespoons of water with 50 g of spelled flour and 1 tablespoon of sugar to make a paste. Place in a pastry bag and make the crosses on the surface of the loaves.
5. Brush the rings with beaten egg and place the tray in the preheated oven to 220°C. Bake 15 minutes until they grow and brown. Heat 4 tablespoons of milk with 2 tablespoons of sugar until it dissolves and brush the top of the bread. Allow these Lemon Rings to cool over a net. Serve sprinkled with powdered sugar.
